Grilled salmon skewers

A quick yet impressive salmon dish, perfect for barbecues, summer lunches and dinner with friends.

Ingredients

  • 450g salmon loin
  • 1/2 cup plain yoghurt
  • 2 tbs Massaman curry paste
  • 2 yellow capsicum, cut into 3cm pieces
  • 2 medium zucchini, thickly sliced
  • 2 tbs olive oil
  • 2 tbs sesame seeds
  • 1/2 cup chopped coriander
  • 1 lemon, sliced
  • 1 red chilli, thinly sliced

Cooking Method

  • Step 1

    Cut the salmon loin into 3cm pieces. Stir the yoghurt and curry paste together in a large bowl. Add salmon pieces and coat well.

  • Step 2

    To assemble skewers, alternate salmon, capsicum and zucchini pieces onto each skewer. Sprinkle with sesame seeds and drizzle olive oil.

  • Step 3

    Preheat a barbecue and cook skewers for 10 minutes, turning occasionally, until salmon cooked through.

  • Step 4

    Serve with lemon slices and top with chilli slices and coriander.
